Why our selat has no mayonnaise

Selat solo came from Dutch kitchens and was made Javanese in the palace at Kartasura: the beef roast became galantine, the gravy became a thin sweet broth with nutmeg, and the sauce became a mustard of mashed egg yolk, vinegar and a little sugar. Somewhere in the eighties restaurants began serving it with mayonnaise from a jar, because it is quicker.

Bu Endang, who opened this kitchen in 1986, never changed. The egg yolk mustard is made every morning, a bowl of it, and when it runs out we tell the table rather than open a jar. On busy Sundays that happens at about one in the afternoon.

If you grew up with the mayonnaise version, ours will taste sharper and thinner. That is the old way, and we think it is the right one.

My father ordered the same selat here in 1990. I ordered it last month and the mustard was exactly as he described it.Hendra Wibisono, Jakarta
We booked the pendopo for my mother's seventieth, thirty people on pandan mats. They asked twice whether anyone could not eat goat.Ratna Sari, Laweyan

Asked most often by first time guests

Which dishes are hot

Garang asem and sate buntel are hot; the menu marks them. Everything else is mild, with sambal on the side.

Is there anything without goat

Most of the menu. Tengkleng and sate buntel are goat; selat is beef; timlo, liwet and garang asem are chicken.

Can we bring a cake

Yes, for birthdays. We keep it in the fridge and bring it out with plates and a knife, at no charge.

Is there parking

Cars park in the front yard, eight at most. On Sunday mornings it fills by nine, so the street is easier.

Do you deliver

Through the food delivery apps within Solo. Tengkleng and selat travel well; serabi is best eaten here, warm.
