Roasted Tuesday, brewed today.
We roast beans from Toraja, Enrekang and three other farms twice a week, behind our bar on Jalan Bonto Lempangan. Come in for a cup, or order the beans and brew them at home.
10:00 to 0:45 · 40 g
Let it bloom
A little water first, then wait. Freshly roasted coffee still holds its gas; once it has bloomed, the water reaches every grain evenly.
20:45 to 1:51 · 250 g · 92°C
Pour in circles
From the centre outward, slowly and in circles, in two pours. Keep off the paper's edge, so no water takes a shortcut.
31:51 to 2:50
Let it draw down
After the last pour, nothing gets stirred. The water finds its own way through the grounds. A flat bed at the end means an even brew.

Ready to pour
The dripper comes off, the cup is already warm. Order this morning's brew at the bar, or take the beans home.

From the roaster
My father strained coffee through cloth at his coffee house on Jalan Sulawesi for thirty years. I brew through paper. It takes the same patience.

From people who stopped by
I use the Kalosi for tubruk at the office. The grind is right, no sludge, and it always arrives two days after roasting.
I thought a V60 was fussy. Uul explained it while she brewed, and now I make my own every morning in my room.
The palm sugar iced coffee is not too sweet, you can still taste the coffee. The barongko comes in a banana leaf, just like my grandmother's.
